Using the mother sauce, Chef Brian will prepare a creamy, smoky vodka sauce - umami at its' best! Bolognese is next on the menu with roasted bones, three meats and red wine simmered with the mother sauce to make the king of all pasta sauces. Amatriciana will round out this class with the mother sauce simmered with pancetta and loads of Vidalia onions.

Learn to make Northern Italian-style egg pasta dough and some classic pasta shapes and dishes with Chef Zak Baker. Making and rolling fresh pasta has long been considered too challenging for many home cooks – and even for some restaurants! Chef Zak will demonstrate how choosing the correct ingredients and the right tools can easily make this ancient tradition part of your cooking repertoire. Long ribbons of tagliatelle with butter and Parmigiano-Reggiano, veal ragu with Swiss chard and, everybody’s favorite, butternut squash-filled pasta in the shape of little candy wrappers will all be part of this informative afternoon.

Pork Belly en Mole Rojo Almendrado – braised pork belly in almond and guajillo chili mole and a celery root and chayote slaw dressed with apple vinaigrette

Picante Chocolate Cake – Mexican chocolate spiced cake with chipotle chilis and candied kumquats.
